I don’t know what it is about Charcuterie trays that intimidated me so much. There’s something SO fancy about them and I wanted to master them for the longest time, so when I finally did I knew I had to share it with you. Whenever you go to a fancy dinner or cocktail party you always see these trays with the perfect collection of cold meats, cheeses, and spreads. But, what is it that makes them work together? For this tray I went with a simple palette by choosing basic meats and cheeses: Marinated Mozzarella balls, Triple cream brie, Pesto Gouda, Cheddar with Port Salute, Prosciutto, and Salami. I complemented them with Grilled Marinated Artichokes, Tuscan Black Olive bread, Green Olives, and Roasted Baby Peppers, and the whole thing made me feel like a professional chef.
The Roasted Baby Peppers really added to the look (and taste) of the tray and were honestly so simple to make. Just preheat your oven to 350, drizzle them with olive oil, salt and pepper and roast for 25 minutes. A simple and elegant tray like this can really take your party to the next level and makes your guests feel oh so fancy. I’d suggest also grabbing some cheese markers like this one so your guests know what they’re eating.
Pro-Tip: This tray works GREAT as a unique (and romantic) dinner for two!

I saw this on INSTA & it was instant love. This Wisconsin girl loves her charcuterie! My fiancée & I love doing this for dinner sometimes with some red wine. Definitely will be adding those roasted red peppers to our repertoire!
