Brace Yourself. Winter is here, and if this weather is telling us anything, it’s that it doesn’t intend on leaving anytime soon. I have such a love/hate relationship with this time of year. I love the comfort of a snow day, but hate braving the outside when it comes time to get off the couch. However, one big benefit of the winter is that you always have an excuse to cozy up, light the fire, and, well, eat.
It wasn’t until this year that I really became a fan of soup. It’s so simple to whip up and instantly warms you up. In the spirit of the winter season, today i’m sharing three comfort-food friendly soup recipes that Jordon and I have been eating on repeat this year. So, read on and try adding each of them to your weekly meal-plan! I promise, you won’t be disappointed!
Italian Meatball Tomato Bisque
About the Recipe
This Italian Meatball Tomato Bisque is the perfect twist on a classic Tomato Soup Recipe. Jordon and I made it for lunch today, and had none left over it was so good.
It takes only a few minutes to make, and fits perfectly with any Paleo diet too.
Recipe adapted from PhysicalKitchness.com.
Ingredients:
1 leek stalk, sliced thinly
olive oil
1 28-ounce whole tomatoes and juice
1/3 cup chopped basil
1/3 cup heavy cream
1/2 tsp red pepper flakes
1 lbs ground beef
2 tsp garlic powder
3 tsp dried oregano
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 tsp dried basil
Directions:
Preheat the oven to 400 degrees. While it’s heating up, combine Ground Beef, garlic powder, oregano, salt, pepper and basil in a bowl. Mix well and form into 6 large meatballs.
Slice the leek thinly and sauté with a splash of olive oil. Then, add to a blender with the canned tomato and juice, heavy cream, fresh basil and red pepper flakes. Blend well.
Once blended, add to a sauce pan and heat up. Pour over meatballs and serve with basil and parmesan if desired.
Loaded Baked Potato Soup
About the Recipe
If you ever have a busy day, then this slow cooker Loaded Baked Potato Soup is for you.
We first made this a few months back, and have made it once a week ever since. We top ours with bacon, cheese and chives normally, but you can customize however you like!
Recipe adapted from the Recipe Critic.
Ingredients:
4 peeled and diced russet potatoes
1 yellow onion, chopped
3 cups chicken broth
1/4 stick of butter
1/4 cup flour
1/2 cup sour cream
1 cup half and half
Chives
Bacon (if desired)
Cheddar Cheese
Directions:
Add your diced potatoes to a slow cooker with the chicken stock. Cook on low for 5 hours.
An hour before the timer runs out, place butter, flour, sour cream and half and half into a sauce pan. Mix until it becomes thick, then add to the slower cooker.
Once done, top with desired toppings and enjoy!
Italian Sausage Tortellini Soup
About The Recipe
Not sure if you’re in the mood for Pasta or Soup? This Italian Sausage Tortellini Soup has both!
We’ve been making tomato based Tortellini Soup for a while, but just recently added sausage and LOVE the way it tasted. Really filling, and so perfect for a cold day out!
Ingredients:
1 lb italian sausage
1 onion
Dash of Garlic
1 quart of Chicken Stock
1 28oz can of diced tomatoes
3 tbsp tomato paste
2 handfuls of spinach
1-2 bags of tortellini (depending on how much pasta you want)
1 cup heavy cream
red pepper flakes to taste
Directions:
Add sausage, garlic and onion to a pot and sauté until the sausage is brown and the onions are translucent.
Add in the diced tomatoes, chicken stock and cream. And, let warm up, whisking well. Once warm, add spinach and tortellini and let cook.
Serve in a bowl with red pepper flakes and parmesan and enjoy!
