Happy Wednesday, loves! This week has been going a mile a minute. With our big move to Florida just 3 days away we’ve been spending every moment packing and planning. I don’t think I could have made it this far without these insanely delicious strawberry streusel muffins (they’re THAT good).
Whenever I get really stressed (i’m lookin’ at you big move), I bake. Yes, I know that’s counter-productive, but everyone has their thing, right? From cookies to muffins and cinnamon rolls I can’t seem to stop. But, it’s ok because this week it resulted in one heck of a muffin recipe.
I love making semi-healthy treats like these strawberry streusel muffins because they’re perfect when you need something you can grab on the go. In between packing boxes and working, i’ve been inhaling these bad boys. And trust me, when you taste them you’ll see why.
These strawberry streusel muffins are so soft thanks to the addition of sour cream. It helps to keep them fresh and moist for at least a week, so feel free to double the portion sizes to make a little extra (trust me, you’ll regret it if you don’t). I also have a mile obsession with streusel topping on muffins, if you couldn’t tell from this post or this one. I just love the texture and the extra crunch it gives to the muffin.

- 2 cups flour
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 tablespoon baking powder
- 6 tablespoons melted butter
- 1 1/4 cups sour cream
- 1 1/2 teaspoons vanilla
- 2 eggs
- 2 cups diced strawberries
- 3 Tablespoons soft butter
- ¼ cup sugar
- ¼ cup brown sugar
- ¼ cup flour
- Preheat the oven to 400 degrees.
- In a mixing bowl, combine flour, sugar, salt, cinnamon, baking powder.
- In a separate bowl mix eggs, melted butter and sour cream. Add mixture to the flour bowl and mix well.
- Add diced strawberries and mix well. Then, line a muffin pan with liners. Fill each liner about 3/4 of the way and add strawberries to the tops of each muffin.
- Combine streusel ingredients and mix. Place a dash of mixture on top of each muffin.
- Bake for 20 minutes and enjoy!
