Nothing says Super Bowl to me quite like the food. Let’s be real, at the end of the day everyone’s favorite part of the party is the food. From pizza, to chips and dips, and sliders Super Bowl food was never meant to be healthy. I love to turn regular recipes skinny and did just that with this Skinny Spinach Artichoke Dip.
So, how did I make it skinny? A standard recipe calls for lots of cream cheese and lots of mayo. I swapped out all of the cream cheese and most of the mayo with plain low fat greek yogurt. Greek yogurt is my go to for cheesy or cream based recipes. It’s such a simple swap that doesn’t compromise the taste.
I’ll definitely be making this recipe again this weekend. It can easily be served with tortilla chips or pita wedges. If spinach isn’t your thing (J hates it), you’ll still love this recipe. - 2 cans artichoke hearts
- 1 bag frozen spinach (thawed)
- 4 cloves minced garlic
- 1/2 cup low fat plain yogurt
- 1/2 cup light mayo
- 1/2 cup shredded parmesan cheese
- 4 oz part skim mozzarella cheese (cut into small chunks)
- salt and fresh pepper
- Preheat the oven to 350 degrees.
- In a food processor mix artichoke hearts and garlic.
- Combine all ingredients in a large mixing bowl and mix well.
- Spray a baking dish with pam and add mixture, spreading evenly. Bake for 25-30 minutes.
- Serve with tortilla chips or pita wedges and enjoy!
