What a weekend! Jordon and I soaked up the gorgeous fall weather this weekend by heading to George Washington’s Mt. Vernon estate and it was seriously gorgeous. Monday mornings can be brutal after fun weekends like this one, and I always try to ease myself back into the work week by starting my Monday off with a healthy breakfast.
These skinny breakfast sandwiches are incredible. Any breakfast that is low in calories and loaded with protein is good in my book. I made mine vegetarian to skip out on some of the calories, but you could easily throw in some sausage or bacon! Enjoy & Happy Monday!
- 3 Egg Whites
- 2 Tomato Slices
- 1/4 of an Avocado
- 1 tbsp low fat whipped cream cheese
- 1 bagel thin
- dash of garlic salt
- Put egg whites in a microwave safe bowl and heat up for 1 minute and 30 seconds or until fully cooked.
- While cooking, toast bagel thin and add cream cheese.
- Layer egg whites, tomato, and avocado on the bagel thin and add a touch of garlic salt. Enjoy!
