Fall has decided to take it’s time getting here, so this weekend I decided to curl up, have a pumpkin spice latte and bake these amazing Pumpkin Cinnamon Doughnuts all while pretending there was a slight crisp in the air and leaves falling everywhere.
Buying a doughnut pan was quite literally one of the best baking decisions i’ve made. And, if you haven’t noticed, I have a serious obsession with them. Just check out these double chocolate doughnuts or these golden vanilla doughnuts – YUM. OKAY, so maybe buying the pan wasn’t the healthiest decision. But, it’s doughnuts so i’ll deal. Anyway, i’ve never tried my hand at seasonal doughnuts, so I figured fall was the perfect place to start.
You guys, this recipe is incredible simple, delicious and really really fun to make. Especially if you’re a pumpkin lover like me. All it takes is a doughnut pan, a few baking essentials, pumpkin puree and cinnamon and you’re good to go. So, give it a try & let me know how it turns out!
- 2 cups flour
- 2 tsp baking powder
- 1 1/2 tsp pumpkin pie spice
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/2 cup vanilla almond milk
- 1 egg
- 1 tsp vanilla extract
- 1/4 cup melted butter
- 1/4 cup melted butter
- 3/4 cups sugar
- 1 tbsp cinnamon
- Preheat oven to 375 degrees.
- In a mixing bowl combine flour, baking powder, pumpkin pie spice and mix well.
- In a separate bowl combine pumpkin puree, milk, egg, vanilla and butter and stir. Once mixed, add to larger bowl with the flour mixture. Mix with an electric mixer until smooth.
- Grease a doughnut pan, and add dough to the pan. Fill each doughnut about 3/4 the way full. Bake for 10 minutes.
- While baking, mix sugar and cinnamon in a bowl.
- After doughnuts are done, let cool for 5 to 10 minutes.
- Then, dip them in the melted butter and coat with cinnamon sugar topping.
- Enjoy!
