Happy Friday, my lovely friends! Thank GOODNESS it’s finally Friday! There are some weeks, where I blink and it’s the weekend again. But, this was not that week. That’s why i’m so excited to celebrate the fact that the weekend is finally here with this Pina Colada Recipe. Trust me, this drink is reason alone to throw a party, so you’re not going to want to miss it!
There’s something about a Pina Colada. I don’t know whether its my absolute love of pineapple, or that I always break out into song when I make them (c’mon you know you did too), but they just make me feel so stress-free. Which, if you know me is VERY rare.
This recipe is a little different than others that you’ll see because it’s literally made from a pineapple. I cut out the core of two pineapples and then used it for the juice to make the actual drink. Then, I decided it would be fun to serve it up in the pineapples themselves, and I’m so happy I did. I mean, how cute are these?
One thing to note before you make these, it does take a little bit of time to cut the core out. I recommend removing it in layers and used this tutorial. Fair warning, it can get a little messy. So, if you’re making it for a party I recommend starting early. The recipe below is enough to fit one full pineapple cup – so double or triple if desired!
- 3 oz light rum
- 7 oz pineapple juice
- 2 oz coconut cream
- 2.5 cups ice
- In a blender combine all ingredients and blend until ice is smooth.
- Pour into a pineapple cup and serve immediately!
