I couldn’t not make a Christmas treat..right? Every year I whip up some holiday recipes and this year I was a little stumped. Holiday cookies took a backseat, but a new treat has come to town. We recently learned how to make Marshmallows, and, we’re never going back.
I’ll admit it. The thought of making marshmallows at home always intimidated me. From the gelatin to letting them rise, it just felt a little overwhelming. But, after trying out and perfecting this simple recipe…I’m hooked. I decided to add a little dark chocolate into the mix just to give it a little flair and they turned out SO good. Now, the only question is whether to eat them on their own, as part of a s’more or as a topper in my hot cocoa. But, hey, it’s a good problem to have.
Dark Chocolate Marshmallows
Ingredients
- 3 packets of gelatin (unflavored)
- 6 oz dark chocolate melts
- 1/3 cup cold water
- 1 1/3 cups sugar
- 1 cup light corn syrup
- 1/4 teaspoon salt
- 1/2 cup water
- 1/3 cup powdered sugar
- 1/4 cup cocoa powder
- 1/3 cup cornstarch
Directions
- In your mixer bowl combine your gelatin packets with the cold water. Mix for 1 minute and let sit for an additional 5 minutes.
- Combine your sugar, salt, corn syrup and water in a small saucepan and heat over medium heat until it boils. Then, remove it from heat and slowly add it to your gelatin mixture while the mixer is running.
- Beat the mixture until it is very thick and “Marshmallowy” in texture. Slowly add the melted chocolate as this mixture is being formed.
- In a separate bowl combine cocoa powder, corn starch and powdered sugar. Mix well. Coat a baking dish with the mixture.
- Transfer your marshmallow mixture to the baking dish and top it with the remaining cocoa powder mixture. Allow the marshmallows to sit for 6-8 hours, then cut and enjoy!
