Okay party people – it’s PARTY time! It’s officially Friday, it’s sunny and gorgeous outside, which can really only mean one thing – holy guacamole! As a self-proclaimed guacamole addict (i’m serious you don’t want to go with me to taco Tuesday), I pride myself on making some finger-licking good guacamole.
Do I have your attention? Good, because trust me you’re not going to want to miss this recipe – it has taken years to perfect! I love guacamole because it can be served at any type of party and everyone loves it! Let’s be honest, anyone who isn’t a fan of the green good stuff shouldn’t be at the party anyway (kidding, kind of). So, whether you’re throwing a Mexican fiesta or an outdoor barbecue, this recipe is sure to be a hit.
The only thing I dislike about guacamole is that it doesn’t last. If it manages to make it through an entire party, it will most likely turn brown and look anything but appetizing. But, I have a few tips for you to keep your guacamole looking and tasting fresh all night long. For starters, leave the large avocado seeds in the guacamole. I’m not entirely sure why, but it keeps it from turning brown longer. Second, add fresh lemon juice as soon as you mash up the avocados. For whatever reason, the acid also helps it keep its colorful green flavor.
- 1 fresh tomato
- 1/2 red onion
- 3 large avocados (ripe)
- Juice of 1 lemon
- 1 dash tabasco
- cilantro to garnish
- Peel avocados and use a fork to mash in a bowl until smooth. If you like it really smooth, blend quickly in a blender.
- Chop red onion and tomato and add to avocado mixture.
- Add lemon and tabasco to taste. Mix well and enjoy!
I like to serve this alongside my pineapple salsa. But, it truly can be served with almost anything. I’ve whipped it up a few times at summer barbecues for friends to munch on while the meat cooks!
