Today’s post is hopping on to the blog just in time for Easter! (See what I did there) I’ve told you before that I absolutely adore cooking and baking for spring. The weather has been so dreary here in Indy, so it feels like the only way to get in the spring mindset is to put together something festive in the kitchen.
Every year, my family goes to a big Easter Brunch. This year, we unfortunately won’t be together, so I knew J and I would have to make something special to start a little tradition on our own. That’s where the idea for these Croque-Madame sandwiches were born. And, trust me they are by far the most delicious brunch treat i’ve made yet.
Truth be told, i’ve been making the traditional Croque-Monsieur for a few years, and i’m really not sure why it took me so long to add an egg to it for a delicious brunch-time spin. There are a few steps involved in the process, but I promise it’s worth it.
Croque Madame

Yields 2
For the Sandwich
- Thick bread
- 4 slices good ham
- Grated gruyère
For the poached eggs
- 2 eggs
- Touch of white vinegar
Instructions
- Preheat the oven to 350 degrees.
- Prepare the pan you will poach your eggs in by adding 2 - 3inches of watcher to your pan and letting it simmer. Then, add a bit of white vinegar.
- Crack each egg in it's own bowl and add one by one to the water while swirling it in a clockwise motion. Cook for 5 minutes or until it's cooked through.
- Meanwhile, toast your bread and then layer with ham and cheese. Put in the oven for 5 minutes or until slightly baked. Top with egg and add salt and pepper to taste.
