Have you ever had the Quaker Chewy Chocolate Chip Bars? I swear I used to have two of them a day when I was growing up. This past weekend I set out to make my own, and I have to say if you’re a fan of the original you will love these!
Granola bars are perfect for breakfast on the go or a quick mid-afternoon snack at the office. I made these bad boys on Saturday and after our hike this weekend, we’ve only got 2 left! Looks like I’ll be making them again this coming weekend.
These are so simple to make, but fair warning it can get a little sticky so many sure to have plenty of parchment paper and towels on hand. Also, they are kind of tough to cut so make sure you let them sit long enough so that they don’t crumble. Hope you all enjoy them!
- 2 cups oats
- 2 cups rice krispies cereal
- 1/3 cup melted butter or coconut oil [I used coconut oil]
- ¼ cup brown sugar
- ¼ cup honey
- 1 tsp vanilla extract
- Pinch of salt
- ½ cup mini chocolate chips
- 1. Preheat oven to 375 and line oats on a baking sheet. Put in oven for 2 minutes or until slightly golden.
- 2. Line a baking dish with parchment paper.
- 3. Melt butter or coconut oil in a small saucepan and stir in brown sugar and honey. Boil for 3-5 minutes and stir in vanilla extract.
- 4. In a bowl, combine oats, rice cereal and salt. Pour the butter or coconut oil mixture over and mix well.
- 5. Once the mixture is cool, add in chocolate chips and stir. Add mixture to the baking dish and press firmly together with parchment papers so that your hands don’t get sticky.
- 6. Let cool in fridge for 1 – 2 hours.
