Well, hello lovelies! How have you been enjoying summer? J and I certainly have! It’s hard to believe that it will be coming to an end so soon! Luckily – Florida weather makes it summer nearly all year long. Ever since moving here i’ve been indulging in my fair share of Florida citrus and today i’m sharing a summer citrus salad recipe you can enjoy all season long!
Florida oranges have to be one of my favorite fruits to eat. I swear, it almost tastes like dessert because the grapefruits and oranges are so sweet. I wanted to come up with a recipe that let me indulge in oranges and feel full. This summer citrus salad has the summer taste you crave while still being hearty enough to stop you from reaching for the ice cream! Not to mention, it’s the perfect dish to serve at any summer backyard bash – just look at it! The colors alone look adorable.
- 2 oranges
- 1 grapefruit
- 1/2 tbsp fresh mint (chopped)
- 2 tbsp honey
- Cut the oranges and grapefruit out of the membrane and segment them into slices. Then, combine into a small mixing bowl.
- Add the honey and the mint. Mix and serve cold!
That’s it! It’s so easy right? This may be one of the simplest recipes i’ve shared, but it’s oh so delicious. The addition of honey and mint to the citrus makes it taste so light and fresh. I promise, this simple dish is about to become your new summertime staple. So, head on over to the store, grab some grapefruit and oranges and whip this up, I promise you’re going to love it!
Xo,
Kenzie
