As hard as it is to believe, the holiday season is just around the corner. With it comes the added pressure of cooking up the perfect holiday meal, and for so many of us that doesn’t come shall we say, naturally. But, if you need a helpful hand figuring out what to bake I’ve got you covered with this mouth-watering Cinnamon Crumb Cake recipe. Really, it’s one of those dishes that will have your Mother-In Law begging for the recipe.
Growing up, we always had the most delicious coffee cake on Sunday morning. My mom would buy one herself at our local grocery store and I’d always stare at it on Saturday night wanting so badly to tear it open. It was a Sunday morning tradition that morphed into a holiday tradition, and now we still have one every Thanksgiving and Christmas. But, instead of buying one this year I wanted to surprise my family by making one of my own. Thus, this Cinnamon Crumb Cake Recipe was born. Here’s how you can make one too:
- 1 1/4 cups flour
- ½ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 egg
- ½ cup vanilla almond milk
- 2 tbs vegetable oil
- 2 tsp vanilla extract
- 2 cups flour
- 1 cup light-brown sugar
- 1 tsp cinnamon
- 1 cup unsalted melted butter
- Preheat oven to 375.
- In a bowl, combine flour, sugar, baking powder and salt and mix well.
- In a separate bowl combine remaining "wet" ingredients (egg, milk, vegetable oil and extract) and mix. Pour the mixture over the dry ingredients and stir until smooth.
- Add the mixture to a baking dish and set aside.
- Combine flour, brown sugar, cinnamon and melted butter and stir until a crumble begins to form. Add crumble to the top of your original mixture and bake for 20 minutes.
