If we’re being honest I forget to eat breakfast 6/7 days a week. No, my ratio isn’t great. But, that just means that my Breakfast on Sunday is extra special. Sunday mornings have become a big deal around our house because it’s the one time J and I are both off work at the same time. We try to make it special by waking up early, cooking breakfast and drinking coffee before we head out to run our errands.
It’s this new Sunday Morning Tradition that’s really gotten me on the breakfast train. I’ve been experimenting with recipes here and there, but this little Croissant concoction was soo good that I just knew I had to share it on the blog. No, it’s not as easy as scrambled eggs, but you’ll be able to whip it up in under 30, which is a win in my book any day.
Ingredients
*Makes two sandwiches
2 croissants
2 Eggs
2 Slices Provolone
6 Slices of thick cut bacon
Optional Avocado Slices
Directions
PreHeat the Oven to 400 degrees. Once heated, bake Croissants for 5 minutes adding cheese at the 3 minute mark.
While Croissants are baking, cook bacon in a skillet on medium high heat. Set aside until croissants are done, then add to top.
Crack an egg over a pan to create the perfect over-easy egg. Cook for roughly 1-2 minutes or until the whites are mostly cooked. Add to croissant.
Garnish with avocado if desired and enjoy!
