We had a rainy weekend in DC so naturally J and I had a pretty lazy couple of days, and they were perfect. I spent most of my time watching movies, recuperating from my bachelorette weekend in NYC and baking.
I played around with my banana bread recipe and came up with these amazing muffins. If you like banana bread and walnuts, you’ll LOVE them. Plus, they took me under 30 minutes to make and made our apartment smell insanely good.

- 2 ripe bananas
- 2 eggs
- 1 tsp baking powder
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 3 cups flour
- 1 cup sugar
- pinch of salt
- 1/2 cup walnuts
- 1/2 cup butter
- Preheat the oven to 400 degrees.
- In a large bowl mix 2 cups flower, sugar, walnuts, cinnamon, baking powder and salt.
- In a separate bowl combine mashed bananas, eggs, 1/4 cup melted butter.
- Combine with dry mixture and mix well. Then, line a muffin pan with liners and fill each 2/3 the way full.
- For the streusel topping combine brown sugar, 1/4 cup butter, and 1 cup flour. Mix and place on top of muffins.
- Bake for 20 minutes or until a toothpick comes out clean!
