Get ready to throw out your old oatmeal recipe this fall, because there are three new autumn inspired overnight oat recipes taking over the breakfast table. And, you’re going to LOVE them. Healthy, flavorful and full of fall feels these autumn overnight oats are SO easy to make on your own.
When I first started cooking, I wasn’t the best. But how many twenty somethings are? At that time, overnight oats were one of my absolute favorite recipes. Why? Because they are the easiest breakfast you can make, minus cereal anyway. Even though i’m much better at cooking now, this simple breakfast is still one of my staples. I love that I can make it in the evening and eat it on-the-go as I work in the morning. I started experimenting with some new fall inspired flavors and can’t wait until you see what I came up with.
Autumn Overnight Oats Three Ways
Pumpkin Pie Overnight Oats
Ingredients:
1/2 cup vanilla almond milk
1/4 cup oats
1/4 cup pumpkin puree
2 tsp pumpkin pie spice
1/2 tbsp maple syrup or honey
Directions:
In a jar combine all ingredients and mix well.
Let sit overnight and mix again in the morning. Garnish with pumpkin pie spice and enjoy!
Cinnamon Apple Overnight Oats
Ingredients:
1/2 cup low fat milk (I used almond milk)
1/4 cup rolled oats
2 tsp cinnamon
2 tbsp honey
3 tbsp applesauce ( I used cinnamon)
1 tbsp chia seeds
half of an apple (diced)
Directions:
Combine all ingredients but the diced apples in a jar. Mix well and let sit overnight in the fridge.
In the morning, add diced apples and mix well. Then, garnish with cinnamon and a cinnamon stick – enjoy!
Banana Bread Overnight Oats
Ingredients:
1/4 cup oats
1/2 cup vanilla almond milk
1 tbsp walnuts
1/2 mashed ripe banana
1 tsp cinnamon
2 tsp maple syrup
Directions:
Mix all ingredients in a jar and let sit overnight in the fridge.
In the morning, mix well and top with banana, cinnamon and walnuts. Enjoy!
