Apple season is in full force and we bought way too many from our apple picking outing last week. I love experimenting with traditional recipes, so J and I decided to make some cinnamon apples for our pancakes and they turned out SO good. Happy Sunday morning & enjoy!

Apple Cinnamon Pancakes

For the Pancakes
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 cup vanilla almond milk (or regular milk)
- 1 egg
For the Apples
- 2 tablespoons butter
- 2 apples, peeled and diced
- 2 Tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1/3 cup maple syrup
For the Pancakes
- In a large bowl, combine flour, baking powder, salt and sugar. Add the almond milk and egg and mix.
- Heat a buttered pan on medium heat. Pour batter onto the pan and brown on both sides.
For the Apples
- Add butter, apples, brown sugar, and cinnamon to a medium sauce pan. Stir over medium heat until apples become tender. Add syrup and stir. Serve over pancakes!
