Let me start this post by saying that I’ve never been one for diets. Luckily, my workout routine lets me eat (almost) anything I want, but i’ve noticed that I feel better when I eat veggies, fruits and meats. A few years ago J and I shifted our cooking from cheeseburgers and pastas to salads and lean meats and I can’t tell you how much more energy I have. So, today I figured i’d share a list of a few of my favorite super easy, super healthy recipes.
J and I are huge homebodies and we both love to cook! On a typical weeknight, you’ll find us in our coziest clothes (like this adorable top from Kairo Clothing), glass of wine in hand cooking something up in the kitchen. By cooking our own food we’ve learned just what we want to put in our food and what we should leave out. We try to avoid sweets and tons of fat, and in the process have found some really great recipes that keep us healthy and energized. The best part? None of what we eat is restrictive so it doesn’t feel like we’re dieting. So, without further ado here’s a roundup of our favorite recipes!
Breakfast
I’m a huge sucker for oatmeal so I love this Peanut Butter Banana Chia Oatmeal and these three Autumn Inspired Overnight Oats I made last year.
I’m a self-proclaimed #SmoothieQueen, so it’s no shocker that this Banana Breakfast Smoothie and this Banana Berry Smoothie Bowl are on repeat Monday mornings. I also make this delicious Acai Smoothie bowl that I shared earlier this year a lot!
Lunch
I just discovered this Mediterranean Tuna Salad a few weeks ago, and have made it for lunch every week since. It’s a great way to add some more fish into your diet!
I call this an adult PB&J. It’s the most delicious Peanut Butter, Strawberry and Banana wrap! Plus, you can add a little honey and it tastes amazing!
You know those days where you just feel like a salad? I have them a lot. But, after I ate I was still hungry. That is, until I found this BLT Salad (#Bacon) and this Skinny Cheeseburger Salad. Both SO good and super filling.
Dinner
I love pairing a simple stuffed chicken breast with broccoli, green beans or brussel spouts on a busy weeknight. So, this Prociutto Chicken Rollatini and this Chicken Rollatini with Spinach are staples in our house!
You either love spaghetti squash or hate it and luckily I LOVE it. This Spaghetti Squash With Meat sauce and this Pad Thai version frequent our house.
On the nights when i’m craving real pasta I whip up this incredible Skinny Alfredo or Skinny Mac And Cheese. Both are SO good!

Hi Kenzie, I love this article and the photos. I also love smoothies. I make green smoothies every morning and now in winter I alternate them with porridge (made with water or coconut milk). I think smoothies are the best way to start your day, don’t you think?
